A Day Of Food

To say that it has been a day of food is no understatement.

It actually all started yesterday morning. When we decided that we really wanted to start eating cleaner foods, we would skip shopping at Walmart this week. So we decided to go to three different stores in a nearby city. There is one that sells ONLY organic foods; one that sells mainly fresh produce, cheese, and alcohol; and another that just has a better variety of foods than Walmart does (although we did still go to Walmart for a couple of things at the end of the day). By going to these three stores we would be getting a much better quality of food.

Once we knew our store plan, Papa Bear and I sat down yesterday morning and started looking up recipes that were cleaner eating style recipes. It was so fun to sit there with him, find new recipes, make a grocery list on Cozi, and make a menu plan TOGETHER for this week consisting of almost all new recipes for us. Now I am so excited about cooking dinner every night this week!

So this morning we got up, ate breakfast, and then got ready to head out. Over half of what we got was fresh fruits and vegetables, along with some great quality meats. All of the stores were fairly new to us and we definitely didn't explore as much of them as we could have. But let's face it. Three grocery stores over a period of a couple of hours WITH a 3.5 year old that hasn't napped is not the easiest task in the world.  I am just happy that we found almost everything for our menu plan this week.

After shopping for hours we came home and put everything away. Then we had a super yummy afternoon snack.
That avocado was so fresh, and if you haven't ever had a kumato then you need to go and find some NOW! They are amazing and something that is really cool about them is that they are always ripe! My mouth is watering just thinking about them now. lol

After our snack we ran out again to go to Walmart and get just a few more things that we needed, but didn't want to spend more for at other places. When we came home it was time to get going on dinner! We got some fresh salmon at the store that sells only organic foods so we wanted to do something yummy with this.
Papa Bear made some amazing grilled salmon with lemon and rosemary. Those two things complimented that salmon in a way that I honestly didn't expect. We also had corn on the cob (Baby Bear's fave!!!!) and sauteed green beans. I can not even begin to tell you how amazing dinner was! I was full, but felt great about everything on my plate.

As soon as I finished cleaning up from dinner I started pulling out ingredients to make something that was a first for everyone in my house.
The other day I saw this recipe for Rhubarb bread on This Beautiful Life, and we already had some fresh rhubarb sitting in our freezer that I have been DYING to use. Needless to say when I saw it I knew we would be making it soon! So today I got the only two ingredients I didn't have and after dinner I set up all ingredients into individual containers so that Baby Bear could pour them together and mix it. I followed Brittany's recipe and instructions step by step and when it was done we tried some. It is AMAZING!!! I know what we are eating for breakfast in the morning!!!

Now I am officially sitting down for the first time all day. I am exhausted, but feel so great about how today went! It was so fun and definitely delicious!

  1. Sounds incredible! I still haven't done our meal plan for the week. Definitely need to get on it tomorrow! I still can't imagine having the patience for going to FOUR different grocery stores in one day!!

  2. I haven't meal planned in a couple of months and it's been killing me! I'm always frantic at dinnertime. Your post has an inspired me to get back into gear with this! We rotate shopping between three different grocery stores normally -- our regular grocery store, our specialty organic market and Whole Foods -- and it's always such a pain to shop with my 2 year old! I dread grocery shopping regularly, haha.
