Homemade Collard Greens

It has been forever and a day since I have posted a single recipe! So I decided that maybe today was the day to start again. Today I'm showing you how to make collard greens the way that I had them growing up, because the canned or frozen stuff just isn't the same!

Ingredients:
  • Whole leaves of collard greens
  • Water
  • Salt
  • A Meat to season ( we used bacon grease from where we had cooked bacon. But growing up my grandmother used fatback)
Directions:
  1. You will rinse the greens and flip them over so that you can see the veins that run through it pretty well! 
  2. Start cutting the larger veins out. (mainly the ones that branch off  of the stalk. you will toss those and the stalks.)
  3. Cut the leaves into good sized pieces while getting rid of the veins. (you don't want them real small)
  4. Now you just put your greens, meat of choice, and a good amount of salt into a pot and cover it with water. 
  5. Put it on the stove and bring to a boil. Once it has boiled you will cover the pot and turn it down to medium and cook it for a few hours. (we started ours between 11 and 12 to eat it at dinner time. ) It takes a few hours. My mom told me that they would go atleast three shades darker when they were ready. 

See, other than getting rid of the larger veins, this recipe is super simple! Just make sure you keep water in them while they are cooking. Then just dip the greens onto your plate out of the water!
